Me, last night in Japan

about my kitchen.
-My kitchen consists of:hot plate, microwave, tabletop oven, george foreman grill, blender, sink, fridge. Yes, you can create wonderful vegan food without fancy equipment. In fact, the george foreman and blender aren’t even necessary. They come in handy in a pinch, but I don’t use them that often. Note: The GF grill is a fantastic panini press.

-Things I always have on-hand: extra-firm tofu, soy sauce, extra virgin olive oil, broccoli, frozen edamame, tea, some kind of onion, sliced almonds, a potato of some sort (probably sweet), unsweetened applesauce, canned black beans or chickpeas, Newman’s balsamic vinaigrette, probably an apple, and a nut butter of some sort. You should, too.

-Favorite cookbooks/books about food: Vegan With A Vengeance, Healing with Whole Foods, The Joy of Cooking, Diet for a Small Planet

-A few things that may come in handy:
*If you want to bake cute cupcakes and muffins (and you have a kitchen like mine), I suggest you look into silicone cupcake liners. I know a lot of people don’t like silicone bakeware, but I really like these. They fit in my “oven,” so I don’t have to go over to a friend’s every time I want to make muffins.
*Spices. They make the difference. A few I keep on hand at all times: a curry powder, basil, sesame seeds, and garlic powder. I also use a lot of cumin and coriander for some reason. Thyme is nice, too. And full of antioxidants. Buy spices in small amounts because they’re better when they’re fresh and you generally don’t use a ton at a time. Spices can be expensive. Ask for them on your birthday.
*Steamer basket- I desperately want a rice steamer, but they’re crazy expensive, so right now I have a steamer basket. It doesn’t work that well for rice, but steams vegetables and tofu perfectly. (I buy my steamed rice from the Japanese place a few blocks away. Lame.)
